Is there a consolidated list of of stats available? Specifically, something organized by faction and not by book.

Most people tend to use one of the various army builders for that purpose.

If you needed a paper copy, you could build a list with one of everything on the official Army builder and then print it to a PDF.

I would recommend making do until the new edition comes out around the end of the year. There is a good chance that they will need to update all the units, and if we are lucky they will do it in a single giant PDF instead of one per book.
